Ingredients

2 large cucumbers or 4 Israeli, or mini cucumbers

1 cup sliced grape tomatoes

1/4 sliced red onion

2 tbsp olive oil

2 tbsp fresh herb such as basil, dill or Italian parsley

2 tbsp sliced kalmata olives

black pepper to taste

*optional squirt of 1 lime

Directions

Slice all of the ingredients and toss together.  

Notes

Best served fresh and chilled.
